Abstract

Tourism activities cannot be separated from the tourism industry that covers the whole activities process in providing the needs of people who are having a tour. The existance of a restaurant, as a part of Food and Beverage Department is a hotel, cannot be abandoned. It is one of the sources of hotel operational income besides the rooms.  A restaurant also functioned as a place to do the activities of keeping, cooking and serving food and beverage according to the customers choices. The food and beverage served by the restaurant should be qualified or contain sufficient nutrition such as protein, carbohydrate, vitamins, fat and mineral.
