Abstract

Besides selling room service, the accommodation service also provides food and beverage to the guests. The food and beverage served to the guests should fulfill the hygiene and sanitation factors. They are acquired from the ingredients that will be cooked and the chef. The foods, which are cooked and served to the guests, should meet the health requirements in order to be safe to be consumed. Besides, the employees’ working safety should be considered as the employees maintain the success of a duty. The working health and safety are the significant things for the food processing service in the kitchen.
