Abstract

To produce the qualified bread needs the highly quality ingredients and should be made based on the standardized recipe. Another important thing that should be considered in making the bread mixture is the bread making step and the mixing process. The good mixing will form the structure and extensiveness to the process of fermentation and elasticity of the glutinous mixture.
